Several media are echoing an alarm on soy, after a French authority recommends catering services to reduce the use of soy, while there are a no meta-analyses that support such a position. Interestingly, the same French authority never made a similar statement on red meat, while those risks are heavily backed by meta-analysis. Thai Soy Sauce basics 🇹🇭:

(1) Thin = Lighter than Japanese/Chinese*
(2) Mushroom = A secret weapon ie a light/thin soy sauce, with extra unami. Quite different to Chinese mushroom soy, which which is rich/heavy
(3) Golden Mountain = A soy-based seasoning sauce unique to Thai cuisine, invented in 1954
(4) Dark = Richer and viscous, for coloring
(5) Sweet = Dark soy (above) + molasses. Very similar to Indonesian 'Kecap Manis' soy sauce
(6) Soybean paste = used in some Chinese influenced thai recipes
